Saturday morning Eban and I were at our local grocery store Lowe’s. The store opened about a year ago so it’s still new and very clean. I go there at least every other day and love to browse around. One of my favorite things to do is to check out the reduced priced fresh fruit, veggies, and meat. This time we spotted a fantastic deal on a pork roast for only $4 (it was a little more than half off regular price). So, it was decided that we would have a Sunday roast dinner.
Eban slow-cooked the roast for 7 hours in the oven. He used fresh jalepenos, apples, carrots and celery to season the roast. It came out soooooo tasty and tender! We ate it with rice, fresh corn and fresh bread. We ate the roast Sunday (twice), Monday and Tuesday for dinner! We ate off of that roast 4 times! That’s 50 cents a serving for the meat! Add to that the very low cost of a little rice, corn, and bread the cost per serving was less than $1! I’ll take this meal anyday over a $1 hamburger from Macdonald’s!
